At Briar Cliff, Chef Paul oversees all aspects of food service on campus, as well as off-campus catering events. Prior to BCU, he founded SproutStream — a mobile restaurant on wheels that served locally grown organic and healthful food. Chef Paul also operated a catering service, Real Food, Inc., and prior to that served as the executive chef and operator of the former Gardner Cafe in the Sioux City Art Center.
